First Harvest!

The garden has only been open a few weeks, and we’re already harvesting crops.

Thanks to the recent summer shower, we have had a lot of growth in our garden beds. Mustard greens have grown quickly and are ready for harvest. They’re tangy and make an excellent salad, or sauté them, and add them to a potato dish like a Spanish tortilla or mashed potatoes.

If you haven’t planted anything in your garden bed, come by and take a look at what’s growing. We maybe at the end of our growing season, but we are still growing. Plant a cover crop like legumes. That will enhance the soil for your spring planting, or try lettuce or other quick growing greens.

Remember, we’ll have someone everyday from 6:30pm to sunset to help you out. Or you can email us at info@EdisonCommunityGardens.org.
